La collocation anything / everything + but signifie "tout sauf", c-à-d. indique qu'une chose est contraire à ce que l'on pourrait attendre :
He is a militant for the cause, yet anything but a fanatic. Il est un militant pour la cause, et pourtant loin d'être un fanatique. She may work for a charity, but her behaviour is everything but charitable. Même si elle traville pour une œuvre de bienfaisance, son comportement est tout sauf charitable.
Note : Il importe de ne pas confondre anything/everything but, all but et nothing but.
